Why there's a coffee cart
— Rachel
I've been drinking coffee about as long as I can remember. My grandma was a serious coffee drinker and she'd let us have some as kids, terrible instant stuff, and it stuck anyway.
My mom was the one who kept telling me I should start something of my own. She passed in May of 2025, and it rearranged what I thought I had time for. My dad's a teacher and a carpenter, and he spent his summer break building me a cart.
We opened that September. Everything I pour is made with local beans and syrups I make myself, and my favorite part is the first sip, seeing someone's reaction, knowing I get to play a small part in their day and make them smile.
The name is the two things I believe in most, put together. Sonshine is for the Son of God, and for optimism, trying to see the bright side of things, even when it's really dark sometimes. That's what helping you fill your cup and warm your soul really means.
